A blend of 43% Silvaner, 43% Bacchus, 14% Grauburgunder, the bacchus is destemmed and left on the skins for one week before finishing fermentation in stainless steel, where it rests on full lees for ten months. Silvaner and Grauburgunder follow the same vinification process but age post-fermentation in Franconian oak. Michael notes how the Bacchus is what you smell and the Silvaner is what you taste, but the wine itself it very friendly and open, while being playful and fresh! Nice and citrusy with some herbal tones and a mineral backbone.
