With so much incredible wine flowing out of Etna, its important we don't forget to continue to champion the wines to the south in Vittoria. Most of the respect for this winegrowing area on the Mediterranean sea is due to the trio at COS, an acronym for friends Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. Their commitment to biodynamic farming and native fermentations since the 80's is why other small producers like Paolo Cali and Vin B are able to thrive. A recent chance to taste the full lineup from Paolo Cali, new to the New York market, impressed so much we couldn't wait to feature them. While new to NY, Paolo has been making wine for 30+ years on family land where vine roots dig into sandy soils with limestone beneath. Vin B was started by two friends who met at COS, now making small quantities of wine in a garage. These three producers make up our Sunday offering for you today, highlighting our favorite native grapes of Vittoria like Frappato, Nero d'Avola, Zibibbo, and Grillo.
