An Impressive 2023 Lineup from Arnaud Baillot!

You might have tried some wines from Arnaud Baillot in the past few months here at Chambers Street, his Bourgogne Rouge, Haute Cotes de Beaune Blanc, and Nuits-Saint-Georges have never stayed on the shelf very long so when the new vintage arrived here in New York, I was trilled to be able to offer a much larger lineup from this new rising star from Burgundy.

This is only the 5th vintage for Arnaud Baillot who, alongside his wife Laure was able to acquire his first vineyard in 2017. What started quite small has now grown to 7.5 hectares across the Cote d’Or. Arnaud grew up in Burgundy, in an area around Chablis and had a connection with the vines around him from a young age, always dreaming about building his own estate. That dream has become a reality, and I must say that after having had Arnaud's wines the past few years they are some of the most exciting new wines I have tried. Full of purity and elegance, both his white and red Burgundies have been singing!

In addition to precise winemaking, his farming has always been organic with a focus on biodiversity. Arnaud explained how, “we farm everything organic. [The} key is listening to mother nature around you and respect the land.” He takes a very hands-on approach in both the vineyards and the cellars, as he continues to take chances with his winemaking, trying new techniques such as the incorporation of concrete and clay eggs during elevage. In a short period of time Arnaud has already begun to make a name for himself, and we cannot wait to continue to taste these incredible red and white wines from throughout the Cote d’Or.

When it comes to winemaking, Arnaud vinifies all his white wines without sulfur and with fermentation in oak. They are aged for 12 months in 10% new oak, used oak, and about 20% in clay for some cuvees. Arnaud is looking to make white Burgundies that are salty, and fresh. In doing so, he is making terroir driven wines, tasting the Meursault, Chassagne, and Puligny side by side allow us to see a true sense of place.

His red wines are made sulfite free with fermentation in stainless steel and a minimum of 50% whole cluster (80-100% in some cuvees). Aged for 15 months in 10% new oak, used oak, and about 20% in clay for some cuvees. All wines are unfiltered. Arnaud is making some ethereal reds that are light, with fine texture, and wildly aromatic.
