Morango is a blend of Grenache, Syrah, Carignan and Mourvedre, harvested at the same time, and fermented together. Manuel destems the fruit by hand to keep whole, intact berries. He finds the mechanical destemmers to be much too violent, leading to more crushed berries. His idea is to keep freshness and acidity, and he achieves it perfectly, while still presenting a wine that is characteristically Mediterranean, with some grit and garrigue on the palate. A lovely bottle, best served with a light chill.
