Fornerot, Jérôme 2024 Saint-Aubin 1er Cru en Remilly

His plot of En Remilly is a jewel! Located at the southern end of Saint-Aubin on the border of the Grand Cru Chevalier Montrachet. The south-facing plot was planted in 1988 at about 300 meters of elevation. The grapes are handpicked and lightly crushed before being pressed in a pneumatic press. The juice is settled and placed into French oak barrels for fermentation with indigenous yeast, before being aged for 15 months in 15% new oak and then put in a vat for 3 months before bottling.

The resulting wine has great power with excellent balance. Beautiful purity of fruit with notes of golden apple with lemon and some white florals. The wine has strong minerality with great texture and a long, salty finish. At the bottom of my notes I just wrote, "simply delicious." Just in case I could somehow forget!
