Los Brezos, the only red wine from the bodega, is a plot of 25-30 year old vines (roughly 85% Listan Negro and 15% Listan Blanco) planted at 500 meters altitude. Both jable (volcanic sand) and picon (volcanic ash) make up the soil content at this plot, which translates to a potent freshness and minerality felt in the wine. Gentle crushing by foot in open-top vats avoids aggressive extraction, providing a delicate tannic structure and great purity of fruit.
