Goiset, Pierre 2025 Pet Nat L'Intranquille (Arrives 7/8)

This is 100% Merlot done in methode ancestrale style, hand-harvested with light crushing and pressed as whole clusters over eight hours, which gives just the faintest hint of color to the finished wine. It is aged on the lees in bottle for eight months, disgorged manually with no fining or filtration. It's a pale salmon in the glass with zesty bubbles, showing subtle strawberry fruit and fresh herbs on the nose. The palate is fresh and clean, with great texture and and a crisp, dry finish, captivating in its structure, extending into fine, noble, and mouth-watering bitter notes that provide length. This was a favorite at a recent tasting, refreshing and perfect on a hot summer day! Try it with Melon with country ham and mint leaves – Fresh red berry salad infused with basil – Rhubarb tart with shortcrust pastry and tangy compote!!
