Manual harvesting in the morning followed by cold pre-fermentation maceration for 5 days and alcoholic fermentation for 15 days. Made with 50% whole bunches. Pumping over at the beginning of fermentation and punching down. Aged for 14 months in 30% new 228 L barrels then aged an additional 2 months in stainless steel vats. Only 1045 bottles made.
This is incredibly precise, beautiful concentration of ripe fruit with a spicey note on the end. Theres fantastic elegance with smooth tannins.
