Cold pre-fermentation maceration for 5 days and alcoholic fermentation for 15 days. 100% whole bunches. Pumping over at the beginning of fermentation and punching down. Aged for 14 months in both 500 and 228L barrels, 25% of which are new. Then aged an additional 2 months in stainless steel vats. Excellent concentration of fruit with notes of spice and earth that linger afterwards. A wine of great energy and freshness.
