This is a blend of 85% Chardonnay and 15% Savignin, blended from all of the Domaine’s Chardonnay & Savagnin parcels in the Arbois appellation. The vines are predominately on marl soils, with some limestone and gravel. It is fermented naturally and aged 24 months in used 300L & 400L French oak barrels before being racked into a stainless steel tank one month before bottling, with a low dose of sulfur added. It was bottled without fining or filtration.
