Symbiose is a blend of 40% Pinot Noir, 30% Poulsard, and 30% Trousseau from plots in Monteiller and En Brute. The grapes are destemmed and co-fermented in stainless steel where it spends ten months before being bottles unfined, unfiltered and with minimal SO2. This was a highlight when tasting recently, a perfect combination of bright fruit, stony minerality and tension.
