Simbiosi is also 100% Vermentinu grown on schist soils with some limestone. It shows a bit more depth than the Folie a Deux, with some melon and apple fruit with more savory spice and outstanding mineral depth. It's structured but open, with balanced acid and a long finish. There's just a whiff of flinty reduction that integrates nicely with air. It's a gastonomic and expressive wine that has the body to hold up to a variety of foods, but grilled fish or chicken would be particularly good.
