From a single vineyard - El Pauet Gran, with 67 year old vines of 100% Macabeu grown organically on limestone and red clay soils. hand harvested, destemmed. Skin-on maceration for 8 days. Spontaneous fermentation in stainless steel tanks. Aged on fine lees for 4 months. Tech info from Chase at ZRS Wines // This is always one of my favorite "whites" from Cosmic, because I love Macabeu! In the right hands, Macabeu can have lift and not end up to flabby or soft as it's lower acidity poses a challenge for some folks in the region. The 2023 is fresh and still has nice weight and length. -EL
