Taille aux Loups NV Pet Nat "Triple Zero"

The Taille aux Loups "Triple Zero" is a brilliant Pet Nat made from Chenin Blanc in Montlouis from 50 to 80 year-old vines. The three zeros refer to Zero chaptalization, Zero liqueur de tirage and Zero dosage. The wine is fermented in old barrels and is bottled after about 3 years sur-lattes giving a sparkling wine of great complexity and elegance with a soft mousse. "Comforting nose of apples, baked lemons, quince zest and some brioche, too. Medium body with fine bubbles and crisp acidity. Lively and agile with a mineral frame.
