This is a blend of 80% Gros Manseng and 20% Petit Courbu, grown on red sandstone soils at about 350-450 meters elevation. Grapes are hand-harvested and naturally fermented in stainless steel vats. This is chiseled and taut off the bat with racy acidity and a salty mineral core. It opens up over the course of several hours, but remains firm in structure while revealing subtle apple and citrus fruit. This would be an ideal accompaniment to oysters or any fresh seafood. It's lively and fresh now but could age another 3-5 years to develop more depth.
