"All work done by hand. Practicing organics. Low yields. Harvest is done in the methods of the past with multiple passes. Up to 5 passes through the vineyard. The one for sparkling wine is part of the first pass.
The base wine is fermented in stainless steel at low temperatures and then aged under veil of flor in sherry casks for the first year. The wine is then bottled for second fermentation (Champagne method) with the addition of a concentrated must of PX with 10 days of soleo (sun drying) and yeast from the sediment of the vat from the subsequent harvest. The wine ages in bottle for 3 years and is then disgorged without dosage," (Polaner Selections).
