The Most Surprising Visit at Fernand & Laurent Pillot
Plus New Arrivals from Boyer-Martenot, Bernard-Bonin, Rollin, C & G Boillot, and Ampeau!

I was in Burgundy last month and after retuning home a friend asked what wines had taken me most by surprise, and before really thinking through I said F&L Pillot. I shocked myself with how immediate my response was, but I think of the handful of visits that week, these wines overdelivered immensely from what I was expecting. The more I think about it, the wines are commonly overlooked and just fantastic!
Adrien Pillot returned home to the family domaine in 2017 and has been in full control since the 2022 vintage. He's the son of Laurent Pillot and the grandson of Florent Pillot representing the 7th generation of his family to make and bottle their own wines. They organically farm 15 hectares mainly focused in Chassagne and Pommard and their production is fairly divided up between whites and reds. These 15 hectares are dividved up into 58 different plots that make a whopping 35 different cuvees! Laurent hadn't used weed killers in 10 years but when Adrien returned home he pushed for everything to be farmed fully organically, and as of the 2024 vintage they are certified. Adrien noted how, "organic is not perfect, but it is the best we can do and you have to work smart. We work hard in the vineyards to do as little as possible in the cellar." White wines are all barrel fermented and are aged in 20-35% new oak, but there is a range depending on the vineyard site. The result here are White Burgundies of incredible balance, concentration, and texture. Our tasting comprised of 5 different premier crus from Chassagne, each showing off its distinctive terroir. I am really excited to showcase 4 of their Chassagne Premier Crus today alongside Bourgogne Blanc and a village Puligny-Montrachet from the lieu-dit Noyer Brets. In addition to showcasing the incredible wines of F&L Pillot, I have a fun set of wines that are a mix of what I have tasted recently and loved, as well as returning favorites, and new vintage releases. When I tasted the 2023 Rollin Pernand-Vergelesses Blanc 1er Cru Sous Fretille a few weeks ago I knew I needed to find a spot to highlight it. The Rollin family's plot here is the northernmost, highest altitude in the premier cru which sits facing Corton Charlemagne. This wine blew me away and really outdrinks its price point. It is beautifully textured with elegance and great balance. The wine has excellent concentration and would be incredible alongside a wide array of foods. This is stunning now but will just continue to improve with some time in bottle.
Bernard-Bonin is not a name I normally get to talk about in emails as we normally get just a bottle or two but we were able to get our hands on a few extra bottles of their 2023 Bourgogne Blanc Initiales. This wine comes from the vineyards Les Coutures and Murgey de Limozin (near Puligny) and Les Millerands (close to Meursault) and is a standout when it comes to Bourgogne Blanc! Even with a few extra bottles, this wine is still very limited, so we have set a limit of 2 bottles per customer.
Last week I tasted the 2024 C & G Boillot Meursault Casses Tetes and wow, what an extravagant, opulent, Meursault with amazing texture alongside a long, mineral finish. Camille and Guillaume Boillot have been making stunning wines at their eponymous domain since Guillaume took over the reins of some family vineyards in 2019. Alongside the Casses Tetes, we also have their 2024 Saint Romain Sous Le Chateau.
I was able to get a small restock of 2000 Ampeau Meursault which was a huge hit when we first got this release in the fall of last year. This is perfectly aged White Burgundy, directly from the estate, the wine is very classic to the village, super concentrated with excellent depth. The nose showcases lemon curd, with a salty minerality. A fantastic balance of power and energy. Quantities are limited here so we have set a limit of 2 bottles per customer.
Last, but certainly not least, the 2023s just arrived from Boyer-Martneot and we have an amazing range including Aligote, Bourgogne Blanc, Meursault Narvaux, and Meursault 1er Cru Charmes.
There are some truly excellent representations of White Burgundy on offer today from a slew of incredible winemakers.
