The Champagne of Ciders
Introducing Ciderie de Verzy, with restocks of Bouvy and Gamet!

About a year and a half ago I was introduced to the world of Ciders made in Champagne and you were all as equally excited about these new releases as I was. It has been a little while, but we finally have enough of a restock available to offer, along with a very fun addition to the lineup! Returning is Cidre Bouvy from Clémence Egly of Egly-Ouriet and her partner Victor Bouvy, as well as the Le Cidre lineup from Gamet with larger quantities of Quince and Avrolles than last time. As we head into Autumn, it is the perfect time to stock up on these fantastic ciders. They are fresh, light in alcohol and complex while still being crushable and incredibly food friendly! Dare I say this might be the perfect drink for fall football watching? To welcome so many Ciders back to our shelves we are offering 10% off on orders $150 or more!
New to the shelves of CSW is Ciderie de Verzy, the project of Flavien Nowack, Adrien Renoir, Bertrand Lapie, Antoine Bouvet, and Quentin Paillard started in 2021. All incredible Champagne producers in their own right have come together to make ciders using the Champagne method. They source organic and biodynamic apples and pears from old trees grown locally in Champagne and in Normandy. The first fermentation is in neutral oak barrels and is then aged for up to a year before bottling. They go even further to use natural sugar from fresh apples and pears to start the second fermentation in bottle, before spending 18 months sur lattes. The results are simply delicious, serious drinking cider. With the newest release we have the 2023 Pear Cider and 2022 Cider with extended elevage.

Cidre Bouvy is a fantastic cider made by Clémence Egly of Egly-Ouriet and her partner Victor Bouvy. Victor represents the 4th generation to run his family's farm in Mount-Sur-Corville which is between the Montagne de Reims and Vallée de la Marne. The family has been farming organically since 2015, and prior to 2019 the Bouvy family was cultivating apples for table consumption. When Victor took over the orchard, he and Clémence planted apples that were ideal for making cider on their chalky terroir.
After harvesting, all the apples are kept in crates until January when they press. Primary fermentation is carried out in stainless steel tanks with indigenous yeast. Before the fermentation is completed, the cider is bottled under crown cap to finish. The 2022 vintage is the inaugural release of this incredible new cider, and wow am I impressed by it.
This was one of the most vinous ciders I have had the pleasure of tasting before. It contains incredible balance, and a nice rich, brioche-salty quality to it. You are going to want to stock up on this Cider for the fall!

Since 2018 Marianne Gamet has been leading the family domaine as the 4th generation. During harvest, blending, and bottling her brother Jean-François (a trained enologist working in Bordeaux) assists her. The two produce an excellent array of ciders together with fairly small quantities. Marianne has talked about how, "The idea is to continue working on the Champagne side, as something artisanal, to keep the philosophy of recoltant manipulant, improving techniques in vinification and the cellar, but we also continue to develop on the farm side, since we were farmers from the beginning. We continue on this side with cider, honey, and cereals. The idea is to become closer with nature and change to do more in the vineyards to protect the environment and the expression of terroir.”
On offer today is their 2023 'Le Cidre' a blend of four different apple varieties that come together to create a bright, fruity, easy drinking cider. In addition to this we have two very rare single varietal ciders: one from the Avrolle apple, and the other from Quince. Within Cider it can be rare to see monovarietal bottlings as traditionally different apples are blended together making these bottlings from Gamet extra special. The 2024 Avrolles is full of orchard fruit notes with a light and refreshing palette, while the 2025 Quince is super unique with notes of tropical fruits like guava and pineapple, it is unlike any cider I have ever had before. The Quince cider is about to be your new favorite cheese pairing. The last time we offered these we only had a few bottles to share, today we are excited to have enough available for you to stock up.
