Sabre, Fanny 2023 Beaune Clos des Renardes Blanc
Renard is French for fox (as seen on the label) this refers to the foxes that run in and out of the forest next to the vineyard high on the slop in Beaune above the premier crus. Sitting at 300 meters with 40-50 year old vines. 90% Chardonnay and 10% Pinot Blanc picked and pressed together. The juice sits in a tank for two days before being placed in 500L barrels (20% new) on the full lees for fermentation and aging for approximately 11 months.
The wine is textured and powerful with a balance of great acidity. It has a touch of floral notes with ripe orchard fruit finished with a smoky, salty minerality. A wine to drink now or age for 6+ years.
