Pattes Loup 2022 Chablis Vent d'Ange Mise Tardive
Thomas Pico started his estate Pattes Loup in 2005 after inheriting vines from his family’s estate. With guidance from Alice and Oliver de Moor, Thomas immediately began the conversion to organic viticulture. Over the past twenty years Thomas has taken over more family vines and now has 15 hectares of vineyards all farmed organically, with the addition of vitoforestry (the planting of trees within the vineyards) This has allowed for shade in the vineyards and create living biodiversity in his parcels.
He now does a minimum of 36 months elevage for added texture, dimension, and complexity. This wine is aged in 40% concrete eggs with the rest in stainless steel. The “mise tardive’ on the bottle refers to the wine undergoing longer lees ageing. It is opulent while still carrying excellent acidity with a lot of saline.
