Pauline Pabiot took over her family's estate (Roger is her grandfather) in the mid-2010s and has converted the farming completely to organic viticulture. Though the majority of her family's vines are planted to Sauvignon Blanc, they do have under a hectare of Chasselas in the Pouilly-sur-Loire appellation, an old appellation that currently has a total of only 30 total hectares planted to Chasselas. The 2021 is lively, and refreshing at 10.5% alc. We tasted it recently and were charmed by the clean, mineral profile. By no means a life-changing wine, it's a great deal, a fun take on this relatively obscure grape variety, and a perfect bottle to have on hand for the warmer Summer months that are on the way! Vineyards are 60+ years-old on average. Fermentation is with native yeast and aging is in egg-shaped vats for 6-8 months.
