MIRA 2023 Sauvignon Blanc

MIRA is a sideproject from winemaking couple Mirka Nestarcová and Milan Nestarec, who make most of their wine under Nestarec's name. 2022 marked their acquisition of nearby vineyards in Moravia, which they have farmed biodynamically. The vines are trained in the Guyot system, and interestingly, pruning is virtually nonexistant. The grapes see an overnight maceration on the skins and a gentle pressing. After spontaneous fermentation, the wine is aged in concrete egg and oak barrel. Unfined, unfiltered, and with just 5 ppm of sulfur added before bottling, this wine speaks to so much of what there is to love about Sauvignon Blanc: Candied and tropical fruit notes of mango and grapefruit are beautifully integrated with the lees, and the creamy mid-palate is complemented by a distinctly mineral finish.
