100% Garnacha from a 100+ year old, east-facing, ampitheather-shaped vineyard on a steep slope in Valdizarbe. The poor, hard soil features a lot of magnesium and limestone rock at the surface. The bush-trained vines are farmed without use of herbicides or insecticides; only sulfur and low doses of copper. A portion of the grapes are destemmed, while the rest are foot-trodden as whole clusters. After fermentation with native-yeasts in stainless-steel, the wine is aged in used oak for 1 year. Unfined and unfiltered. Notes of citrus peel and dried flowers provide a high-toned aromatic lift to ripe cherry fruit and fresh herbs.
