From 30-60 year old vines of local varieties from the Senhorim sub-region. Pressing by gravity ensures a slow, gentle extraction, and the must is then decanted in stainless-steel vats for 24 hours. After fermentation with native yeasts, the wine aged 11 months in French oak barrels. The wine is shockingly dynamic and full of life, certainly worthy of at least a few years in the cellar to see what other secrets it holds. For now, it's beautiful, with a bouquet that is very primary giving way to a palate that is at once creamy and mineral driven. Some salinity contributes to the finish, which goes on for quite some time.
