Carette, Robin 2021 Ernestine Chenin (Limit 1 per Customer)

Ernestine is Robin's top Chenin, coming from his oldest plot with vines averaging 60-90 years of age. The soils are schist with some quartz, farmed organically and harvested by hand as are all of his wines. The grapes are pressed in tank and spend 9-10 months in large foudre. The 2021 shows incredible depth and tension, with a layered nose that mixes some rich honeyed tones with lifted herbs and a strong mineral core. The finish is long and mineral, structured and dry but with loads of texture and a broadness that makes it a true standout wine. Compared with the 2022 there is a bit more acidity and cut, but the density is all there. Quantities are extremely small so we've limited it to one bottle per customer.
