This is Tom's entry level bubbly, a blend of 48% Pinot Noir, 36% Chardonnay and 16% Pinot Meunier from all 7 vineyards Tom worked with in 2024. Grapes were gently pressed, oxidatively handled, and fermented with native yeasts in used French oak. The wine was assembled and hand-bottled in February of 2025 after completing primary and malolactic fermentation, without fining or filtration. After 12 months on lees, the bottles were hand riddled and then disgorged without sulfur or dosage.
