Wasenhaus Arrivals Plus Spatburgunder Restock!
Wasenhaus needs little introduction, as Chambers Street Wines has been offering these stunning wines since their first vintage in 2016. Nearing almost a decade of making wine together, Christoph Wolber and Alexander Götze have created what is looked to as the standard for Burgundian style wines made in Germany. Strangely enough, the two Germans met in Burgundy each on their own journey in wine. Between the two of them they worked at Comte Armand, Lefalive, de Montille, Pierre Morey, Bernard van Berg, and Domaine de la Vougeraie. The name comes from a farm that Christoph grew up on and their focus is in old vines, old clones, and vineyards that have been ignored for being too hard to work, or for their low yields. This along with organic farming, with biodynamics sprinkled in, and a hands-off approach to winemaking has evolved into Chardonnays, Pinot Noirs, and Weissburgunders that are showstoppers!
All the wines here are bottled as "Landwein" but break down into the categories of estate-level, soil type, and single-vineyard. The estate-level wines are simply labeled with the grape varietal, Chardonnay, Spätburgunder, or Weissburgunder. Their soil level, which only applies for Spätburgunder, includes Vulkan (volcanic, Kaiserstuhl soils), and Kalk (limestone soils). And lastly is the single-vineyard wines, Bellen, Filzen, Hohlen, Kanzel, and Möhlin.

In addition to the new release of Wasenhaus, we decided it was the perfect time to restock the shelves with some of our favorite Spätburgunders.
The Sven Enderle Pinot Noir, is sourced from vineyards all over Baden that are are either certified or working organically. Vinified 100% whole cluster, fermentation in 800 liter boxes mashed by foot. Aged in oak for 15 months before being bottled un-fined, un-filtered with minimal sulfur at bottling. A nose full of raspberry, and tart cherry that gives way to a earth tones of forest floor. On the palate the wine has refreshing acidity with soft tannins. A bit of crunchy red fruits are present giving the wine excellent energy.
Daniel Fries Pinot Noir from the neighbor of nearby Knebel in the schist rich Terassen-Mosel. After stints at De Montille in Burgundy and Lingua Franca in the Willamette Valley, young Daniel came back to the Mosel. The wine has about 20% whole-cluster and sees only used French oak. Very earthy and structured, soaring red and black fruit and surprisingly spicy.

No herbicides or pesticides are used in the vineyards, harvest is done completely by hand. Fermentation is in open top vessels and the wine is then transered into barrel. Very little new oak is used alongside barrels that are up to 5 years old. There is a beautiful nose of cranberry and tart cherry balanced with earthy tones. It opens up to be incredibly elegant with a frehness to carry and pair along with a wide array of foods. A value spot for Spatburgunder if I've ever seen!
