Though Bouju's 'Mol' bottling has often felt more like a medium-bodied wine from the Gard or Languedoc (he does source some fruit from the south of France), this vintage has much more of an "Auvergne" vibe. The Syrah is typically partially destemmed and goes through 10-day carbonic maceration, while other grapes go through a short maceration after press. All of this, and the character of the Gamay d'Auvergne in the blend give a very bright and energetic profile. Serve with a light chill.
