Guillot, Julien 2023 Aligo Rythm Aligoté

"Aligo-Rythm" is 100% Aligote from our friend Julien Guillot. This bone-dry, saline treat is the perfect match for oysters. The palate is bracingly dry with flavors of lime zest, and Granny Smith apple. Not made from estate fruit, this is a negociant wine that Julien has been making for many years, usually with fruit from the Macon, but in 2023 also from Cote Chalonaise. Nice, easy and fresh. Cold vinification with aging in stainless steel.
