This is 100% Cayuga, a hybrid developed by Cornell in 1945. This wine is made up of the first commercial Cayuga planting in the Finger Lakes, on the west side of Cayuga Lake on silty loam soils. It is hand-harvested, whole-cluster pressed and fermented in two-thirds stainless steel and one-third neutral barrel for six months. Unfined and unfiltered with no added sulfur. It shows nice freshness and vivacity, crisp and mineral with subtle citrus fruit. It's a great example of how hybrid varietals can be just as nuanced and elegant as vitis vinifera.
