Grape Ink NV Damigiana Chardonnay/Savagnin Ouillé

This is a field blend of 50% Chardonnay and 50% Savagnin from a small parcel  at the winery’s home, Petalous Vineyards. The site features shallow wind blown mineral soils. Grapes are hand-picked and pressed together on the same day, then fermented in old neutral barrels and aged 2-3 years in 54L glass Italian Damigiane. Bottled by hand unfined, unfiltered with no sulfur added. This shows incredible depth with layers of spice and a mineral core that take some time to unwind, but after an hour or two open it really starts to shine. Texture, acidity, elegance, and personality. One of the more exciting wines I've tried recently that could age another five to ten years if you feel so inclined.
