The Zazou bottling, often a blend of Carignan and Mourvedre, was made with 100% Mourvedre in 2021. Aside from the intrigue of trying mono-varietal wine of Mourvedre, it's just a lovely bottle of wine! The style here is light-handed, with a relatively short, 8 day maceration, including 25% whole clusters. Luc and Marie filled tanks, and then push down slowly with a big round plank of wood with holes to let juice through. The idea is to be gentle with extraction, and the result is a balanced, brigh expression of Mourvedre with delicate structure in the finish.
