Bichery 2023 Coteaux Champenois Rouge En Val Ligé (Arrives 8/18)

100% Pinot Noir from the "La Source" plot in Val Ligé. Harvested 7 to 10 days after the end of the Champagne harvest to ensure greater ripeness. Maceration using a mix of 50% destemmed grapes and 50% whole clusters for 5 to 7 days. Two punch-downs and two pump-overs per day prior to barreling. Alcoholic and malolactic fermentation occurred in the barrel, followed by 11 months of aging on total lees—until bottling in August 2024. 750 bottles made.
