Bieville 2022 Chablis

Domaine de Bieville is Louis Moreau’s separate property for organic farming, located just north-east of Montee de Tonnerre. These vines were planted in the 70’s by Louis’s father and are quite a rarity, as the vineyard is a connected 45 hectares in one. Representing the 6th generation of his family to make wine in Chablis, Louis is keen on respecting the environment and bettering the vines and soils of his vineyards.   
The grapes here are picked a bit earlier then Louis Moreau’s other sites. Everything goes through alcoholic and malolactic fermentation in tank. Next they rack the wines off the gross lees and allow the wine to sit on the fine lees for at least 4 months with some battonage. The resulting wine is one of strong minerality, with notes of apple and white florals. There is a nice body behind the wine with a slightly salty, long finish.
