The Baudry Blanc "Domaine" is from young vines in several parcels on the clay/limestone slopes in and around Cravant, and from clay with silex on the plateau above La Croix Boissee. The grapes are hand-harvested of course and ferment slowly with wild yeasts in 500 liter oak barrels and concrete "egg" until dry, normally less than 2 g/l RS. The wine is aged on its fine lees in used 500-liter demi-muids until the June after the vintage and is very lightly filtered at bottling. Sulfur usage is minimal. Quantity is limited. (There is again no La Croix Boissee in this vintage so all grapes are in the Domaine cuvee.) "It has a warm vintage expression on the nose, with peach, orange, jasmine and crushed chalk, with just a hint of tarragon. Supple and softly structured on the palate, with a chalky backdrop, this is very dry, with a touch of toasted almonds. A lovely expression..." (Winedoctor) This is a relatively low-acid vintage, so this delicious wine should be enjoyed within 5 to 8 years...
