Previously known as Coche-Bizouard, Fabien Coche is the fourth-generation vigneron of his family Domaine. He began working alongside his father in 1998 and took over in 2005. And yes, before you start to wonder, there is a relation to Coche-Dury. The two were part of the same domain up until 1940 and Raphael (who runs Coche-Dury today) is Fabien’s cousin. William Kelley described, “Domaine Fabien Coche ... is one of the most underrated sources of high-quality white Burgundy in the Côte de Beaune.” Adding that [those] with the patience to cellar them will be amply rewarded.”

Located in Meursault with 12 hectares of vines spread across the Cote de Beaune. Fabien uses traditional winemaking methods with a hands off approach in the cellar. He has been working organically since 1998 while implementing some biodynamic practices. You can see some of the magic HERE on his Instagram page where he documents biodynamic sprays, harvest, fermentations, and so much more! As of the 2020 vintage the estate has been certified organic, Fabien believes that these farming methods help to make the most exceptional product all while preserving the nature of the soils.

Stylistically the wines here are incredibly pure, there is a more hands-off approach when it comes to winemaking with very low percentages of new oak (at most 25% with some wines) and many of those are larger format barrels. The key here is old vines, farmed well with a winemaker letting his grapes speak for themselves.

Of the lineup offered today I would be remiss to not highlight the Meursault Les Chevalières. It was a wine that once I tasted it with our rep Tyger last week, I asked if I could pour a taste for everyone in the shop at the time, even including some lucky customers. It was truly just so good not to share that it inspired this email today. Tyger was kind enough to even leave us to enjoy the remainder of the bottle as it was his last stop of the day and every single person who tried the wine was impressed. I then made sure there was enough for us to offer out to all of you today as it is truly that good! I am aware that this is not an inexpensive wine by any means but believe me when I say it tastes even more expensive than it is.
