New Champagne Chavost Cuvée: Paradoxe

Champagne Chavost Blanc d'Assemblage is a crowd favorite here at Chambers Street Wines, today we are excited to introduce their newest cuvee: Paradoxe. For the first time, Fabian is blending reserve wines in classic Champagne fashion, and the result is a new layer of depth in these fantastic, energetic Champagnes. Prior to this addition, all wines from Chavost were made 100% from a specific vintage, although most were not aged long enough to be vintage dated. 
 
Champagne Chavost is a co-operative winery in Chavot that has been led by Fabian Daviaux since 2019. The original co-op began in 1946 with around 20 growers and today has over 70 multi-generational growers. Since Fabian has been in charge, he has convinced all of the members to take their entire 5.5 hectares of organic vines and create a range of wines made without any additives or sulfites. This bold decision on his part has been a great success. All the wines are not acidified, deacidified, or chaptalized, and do not receive dosage, or added sulfites. They go through alcoholic and malolactic fermentation without the use of commercial yeasts or enzymes. It is simply the juice used in production. 
 
Paradoxe is made from 60% Chardonnay and 40% Pinot Meunier from the 2019-2023 vintages. Vinified in a 50/50 mix of 4,000 liter barrels and stainless steel tanks and aged 18 months on the lees, the wine has incredible depth and richness. It opens with notes of brioche, toasted pastries and ripe pear while the palette is structured with a bright, salty finish. Perfectly in balance, this Champagne is the perfect pairing for seafood, or poultry, but will also drink well just on its own.
