Incredible Champagnes from Cazé-Thibaut

At this point, I can't exactly pinpoint the first time I tasted the Champagnes from Cazé-Thibaut, but what I can tell you is that I have not stopped drinking them since. Fabien Cazé was pouring at last years La Fete du Champagne in New York, and I was quite excited to be able to taste through his complete lineup for the first time. I remember stepping away from the day with a further appreciation for these incredible wines. Even almost a year later I am steadfast in my feelings that these Champagnes were some of the biggest standouts of the entire Grand tasting that day. We have stocked the wines on the shelf at the shop whenever we got a chance to get a few bottles here and there, with all of the parcellaire wines arriving to New York at different times, but today I am incredibly proud and excited to showcase the comprehensive lineup of 2021 parcellaire wines as well as the newest release of Naturellement, with a base of 2023.

The Cazé family has been growing grapes in Valle de la Marne for 10 generations but it wasn't until 1953 that Roger Cazé began to estate bottle his own wines. More recently in 2013, Fabien Cazé selected 2.66 hectares of family vines to start his own project. The winery has been certified organic since 2018 and steps are taken throughout the growing season to support plant life in and around the vineyards. In doing so he has continued on his family's ways of meticulous farming with a light touch in the cellar.  

In the cellar the wines undergo slow, native yeast fermentations in 228-350 liter barrels and spend extended time on the fine lees. There is no fining or filtration, and malolactic fermentation is not forced but is rarely completed due to his cave's low temperature. At disgorgement, all dosage levels are decided based off blind tastings to ensure that each individual wine best highlights the terroir that it comes from. The attention to detail from farming to finished wine is evident, and Fabien is truly creating singular, serious, and simply delicious Champagnes. I would not be surprised if in a few years (or less) Cazé-Thibaut is just as sought after as Chartogne-Taillet or Bereche. Diving deep into these wines is an experience you will not regret!
