The Procura comes from an eponymous vineyard, 85 years old and 700 meters above sea level. This wine is fuller and more giving compared to the Tira o Veu, but it certainly balances things out with potent acidity and an elegant palate. A field blend of traditional varieties is fermented in stainless steel before aging in used Burgundy barrels for 8 months, and few more months in stainless before bottling. This bottling is such a tremendous example of a signature fruit characteristic I've found in Susana's wines: very concentrated but high-toned citrus, somewhere between lemon zest and essential oils. An ideal companion for a pork chop
