Suenen 2013 "Le Mont Aigu” Chouilly GC Blanc de Blancs

Le Mont-Aigu is a single vineyard from the Grand Cru of Chouilly. Decidedly chalky, spicy, ripe, and pretty with a touch of herbaceousness on the mid-palate and phenolic bitterness framing the fruit. Perhaps the most overtly chalky of the parcellaire wines from Suenen, usually benefiting from a bit more time in bottle.  // Grapes go through pneumatic membrane press, and see no additions of enzymes or chaptalization. Initial fermentation and aging is in 600L demi-muid for 9 months on the lees. Aging in bottle is for 60 months, and disgorgement was in June of 2023, with 5g/l dosage.
