The cuvée "La Pause" comes from a plot Laurent Saillard originally rented since 2011 from Catherine Roussel of the famed natural wine domain, Clos Roche Blanche. These Touraine vines were planted in 1978, and have been organically farmed since 1991, and biodynamically farmed since Saillard took them over. This is a clean and naturally made Gamay with forward fruit and great acidity
