Parcellaires de Saulx 2020 Gevrey-Chambertin "Les Evocelles"

Les Parcellaires de Saulx is a micro-negociant founded in 2017. At the healm is cellar master Isabelle Laurend who sources grapes strictly from farmers who work organically or biodynamically. Every single wine is made from a single parcel, and in the cellar there is no new oak used. Most cuvees only produce a single barrel of wine. The 2020 Gevrey-Chambertin ‘Les Evocelles’ is a small lieu-dit on the upslope, in the easternmost area of Gevrey. It was aged in barrel for 12-15 months and has been given time in bottle as well. The wine carries spice and a lot of tension. There is depth and grip to this stunning Gevrey perfect for if you wanted to pair some Burgundy with heavier red meats.
