A blend of 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir from Côteaux Sud d’Epernay and the Vallée de la Marne. Vines are an average of 30 years old on clay-limestone soils with chalky sub-soils. After fermentation wines are aged sur lie in barrel for 6 months before an additional 24-30 months in bottle. This is the same blend as Aurélien’s Ultradition Brut just held an additional year en tirage before disgorgement with a lower dosage.
