Notes from Becky Wasserman & Co.- Domaine farmed, organic (not certified). 100% de-stemmed, minimal extraction, 1-week ambient yeast fermentation and maceration, aged for 9 months in used barrels (fermentation finished in barrels), SO2 added only after aging (0-15 ppm total SO2 at bottling).

The grapes are from the Delecheneau's at La Grange Tiphaine, likely utilizing their network of organic vineyards in Touraine.
