For the first time Chavost is making a Non-Vintage blend (previously wines have always been made from 1 vintage but not aged long enough to be labeled as vintage). This is made from 60% Chardonnay and 40% Pinot Meunier from the 2019-2023 vintages. Vinified in a 50/50 mix of 4,000 liter barrels and stainless steel tanks. Aged 18 months on the lees, the wine has incredible depth and richness. The wine opens with notes of brioche, toasted pastries and ripe pear. The palette is structured and balanced with a bright, salty finish. There is no addition of sulfur in the winemaking process.
