This is 100% Cabernet Franc, whole cluster crush into a composite fermentor for about two weeks of maceration. Grapes are pressed into a neutral 25hL oak foudre for the remainder of fermentation and élevage - 12 months in total. It is light and ethereal with taut pomegranate and raspberry fruit, juicy acidity and some herbal spice on the finish. Great with a slight chill, try it with tapas, Indian food, or simple cheese and charcuterie.
