Graine Sauvage (Sybil Baldasarre) 2021 Faugeres Rocalhas

Sybil Baldassarre's 2021 "Rocalhas" is a blend of Grenache Blanc, Roussanne and Marsanne grown on schiste soils in Faugères. Whole bunch direct press, aged two years in tank, bottled in May 2023. Zero additives. The wine shows a pale gold/bronze color, with subtle aromas of stone, citrus, thistle and dried pear that need time to open. The palate is crystalline and mineral , very fine and bone dry, finishing with firm acidity and mineral flavors. Really an essence of schiste, a glass of earth that will accompany a simple grilled fish or mild ceviche. No added SO2.
