As the days get longer, and the weather begins to heat up, nothing does the trick after a long day quite like a glass of Chablis. A lovely entry into the world of White Burgundy as it contains the same grape varietal yet cooler temperatures and Kimmeridgian soils, resulting in brighter, more refreshing representations of Chardonnay. To make it even better, they often come at a much more approachable price. Kimmeridgian soils are key to the flavor profile of Chablis, it is a mix of limestone and clay that is rich in marine fossils which lends itself to wines with purity and minerality. Just as with other sub-regions of Burgundy, there is a classification system based off of vineyard designations, beginning with Petit-Chablis, then Chablis, followed by Premier Cru and Grand Cru. Today we focus in just on the wines commonly referred to as “Village Chablis,” vines often found surrounding the Premier and Grand Crus, flanking the Serein River. I truly believe that the wines from Chablis are some of the most crowd pleasing in style, perfect to bridge the gap between the preferences of a large crowd. To make it even better, these wines do not need to be aged, can pair well with a wide array of foods, and will taste incredible on their own.
