Previously only bottled in magnum, Zappa is now in 750ml. This Zibibbo hails from a century old plot, and is fermented and aged for 1 year in large chestnut barrel. The barrel is left outdoors under a roof so that the temperature changes between day/night and winter/summer accelerate the process. This exchange of oxygen primarily depends the notes of stonefruit, saltiness, and lemon peel rather than producing a really oxidative wine like Marala, Vin Jaune, or Sherry.
