Florez 2021 Cabernet Sauvignon (Arrives Mid-September)

This Cabernet comes from Hunter Ranch in Sonoma Valley, from vines planted in 1972. Grapes are destemmed and see a 30 day maceration, before aging two and a half years in barrel. It's a powerful, throwback Cali Cab that has nice lift, pure dark berry fruit and racy acidity. The tannins are firm, and it's still a young wine, so if drinking now we'd suggest a couple hour decant, but this should pay dividends over the next 5-10 years. Truly a special wine from a spectacular vintage!
